Cadbury Mini Eggs Bars Ingredients:

  • Butter – You can use butter or margarine. In my opinion, there is no difference in taste.
  • Mini marshmallows – Use regular white or mini marshmallows or pastel-colored ones.
  • Box rice Chex – Or substitute one of the variations listed below.
  • Funfetti baking chips (Pillsbury) – If you have trouble finding these, you can always just use white chocolate baking chips.
  • Cadbury mini chocolate eggs – These are my family’s favorite so there is no substitute for these.
  • Rainbow sprinkles – Rainbow sprinkles make the Easter cereal bars recipe look festive and spring like.

Supplies Needed

  • Large Stockpot – I like a large one so that I know I have plenty of room for mixing and stirring.
  • Rubber spatula – The rubber spatulas that have the shape of a spoon are great for mixing.
  • 9×13 Baking dish – You can use a glass or metal baking dish.
  • Large knife – A sharp butcher-type knife is great to use for this but it’s best when you have an entire set to choose from.
  • Airtight container – A flat air-tight container is best so you don’t have to layer them.
  • Parchment paper – Use to place in between layers when storing or freezing the Cadbury Mini Eggs bars.

How to Make Easter Cereal Bars

Place the butter in a large stockpot and cook over medium-low heat.

When the butter is melted, add the marshmallows and stir to combine.

Allow the marshmallows to melt, then stir in the Funfetti chips.

Remove the pan from heat and carefully stir in the Chex, making sure all the cereal pieces are fully coated.

Transfer the mixture to a 9×13 baking dish and top with sprinkles and chocolate eggs.

Press the cereal mixture firmly into the pan, then allow it to cool completely, at least 1 hour.

Cut into 15 bars before serving.
