Ingredients
  

  • 8 chicken breast tenderloins
  • 2 pounds mini potatoes I used red and Yukon gold, quartered
  • 2 ears of corn shucked and cut in half
  • 1 tablespoon olive oil
  • 2 tablespoons butter cut into four slices
  • 1 tablespoon BBQ seasoning
  • Salt and pepper to taste
  • BBQ sauce optional

Instructions
 

  • Preheat the oven to 400 degrees and line a baking sheet with foil.
  • Place each ear of corn and one slice of in a piece of foil, wrapping the foil around the corn.
  • Arrange the chicken in a single layer on one side of the sheet and the potatoes in an even layer next to the chicken. Place the wrapped corn on the other end of the baking sheet.
  • Brush the potatoes and chicken with olive oil and top with BBQ seasoning.
  • Bake in the preheated oven for 20 to 30 minutes, until the chicken is cooked through and the potatoes are tender.
