Crockpot Potatoes Au Gratin Ingredients

  • Russet potatoes, peeled and thinly sliced
  • Butter
  • Flour
  • Heavy cream
  • Shredded cheddar jack cheese, plus more for topping
  • Garlic powder
  • Paprika
  • Salt and pepper

Supplies Needed

  • Slow Cooker – Set it and forget it. The Pioneer Woman slow cooker is available in fun floral patterns and colors.
  • Small Saucepan – A small convenient one-quart saucepan.
  • Crockpot Liners – Not a necessity but makes cleanup a lot easier.

How to Make Slow Cooker Au Gratin Potatoes Recipe

Add the butter to a small saucepan and cook over medium-low heat.

When the butter is melted, add the flour and stir to combine. Simmer until the mixture is golden and fragrant.

Pour in the heavy cream, garlic powder, paprika, salt, and pepper, and stir to combine. Bring the mixture to a simmer.

Remove the pan from heat and stir in the cheese.

Spray the slow cooker with nonstick cooking spray and arrange slices of potatoes in a single layer at the bottom of the pot.

Spread ¼ of the cheese mixture over the top of the potatoes.

Continue layering the potatoes and cheese until all the ingredients have been used, making sure to end with a layer of cheese on top.

Place the lid on the slow cooker and cook on high for 4 to five hours. After three hours of cooking, stir the potatoes to bring the potatoes on the bottom to the top of the pot and return the lid.

Around 15 minutes before you’re ready to serve your potatoes, remove the lid and sprinkle a layer of cheese over the top.

Return the lid to the pot and allow the cheese to melt, then serve.

How Long do Potatoes Take to Soften in the Slow Cooker

Normally potatoes will take 4-5 hours on high or 7-8 hours on low to soften in the slow cooker.

Always make sure that the potatoes are covered with liquid as that helps to ensure cooking through.

Don’t overfill your crockpot either. A slow cooker is designed to be filled around the halfway point. That means if you want to double the recipe, get another crockpot.

Why are My Au Gratin Potatoes Hard

If the potatoes au gratin are hard, it’s because they weren’t cooked long enough or submerged under the liquid.

If you choose to cook the potatoes on low for the entire time, start by placing the slow cooker on high for about an hour and then turning the setting to low for six hours.

I like to do this to help heat up the slow cooker quicker.
