Ingredients

  • 1 ¾ cup cooked black beans, drained
  • 2 large jalapenos
  • 3 cloves garlic
  • ½ medium red onion, diced
  • 2 medium tomatoes, washed and diced
  • ½ cup loosely packed cilantro leaves, washed, dried, and chopped
  • Juice of 1 lime
  • 2 tbsp neutral oil
  • ¾ tsp ground cumin
  • ¾ tsp smoked paprika
  • ½ tsp dried oregano
  • ¾ tsp sea salt

How to Make Black Bean Salsa

  1. Cut the tops off the jalapeños and slice them in half. Remove some or all of the seeds and ribs if you want less heat.

  1. Slightly crush the garlic cloves and peel them.

  1. Finely dice the red onion and chop the tomato.
  2. Wash and chop the cilantro, then set it aside.
  3. Heat the oil in a heavy skillet over medium-high heat.
  4. Place the jalapeño halves and garlic cloves in the skillet. Sear for 1-2 minutes per side until they are browned and softened. Remove them from the skillet and chop finely.

  1. Reduce the heat to medium and return the skillet and oil.
  2. Add the beans, garlic, jalapeños, cumin, paprika, and oregano. Cook for 5 minutes, stirring regularly, until heated through.

  1. Add the diced onion and tomato. Cook for an additional minute.

Remove from heat, stir in the salt, chopped cilantro, and lime juice to taste. And that’s it.
