Ingredients
- 1 ¾ cup cooked black beans, drained
- 2 large jalapenos
- 3 cloves garlic
- ½ medium red onion, diced
- 2 medium tomatoes, washed and diced
- ½ cup loosely packed cilantro leaves, washed, dried, and chopped
- Juice of 1 lime
- 2 tbsp neutral oil
- ¾ tsp ground cumin
- ¾ tsp smoked paprika
- ½ tsp dried oregano
- ¾ tsp sea salt

How to Make Black Bean Salsa
- Cut the tops off the jalapeños and slice them in half. Remove some or all of the seeds and ribs if you want less heat.
- Slightly crush the garlic cloves and peel them.
- Finely dice the red onion and chop the tomato.
- Wash and chop the cilantro, then set it aside.
- Heat the oil in a heavy skillet over medium-high heat.
- Place the jalapeño halves and garlic cloves in the skillet. Sear for 1-2 minutes per side until they are browned and softened. Remove them from the skillet and chop finely.
- Reduce the heat to medium and return the skillet and oil.
- Add the beans, garlic, jalapeños, cumin, paprika, and oregano. Cook for 5 minutes, stirring regularly, until heated through.
- Add the diced onion and tomato. Cook for an additional minute.
Remove from heat, stir in the salt, chopped cilantro, and lime juice to taste. And that’s it.
