What You’ll Need

  • Whole milk (because every creamy dream starts with the basics)
  • Heavy whipping cream (this is where the magic happens!)
  • Vanilla extract (just a dash of pure happiness)
  • A pinch of salt (to balance all that sweetness)
  • Sugar, divided (because life is sweet)
  • Cubed angel food cake (light as a feather, but oh-so-tasty)
  • Fresh strawberries, coarsely chopped (like little bites of sunshine)

How to Make a Strawberry Shortcake Ice Cream Cake

Make the Base:

  1. Heat it up! 🔥 In a saucepan, cozy up the milk, whipping cream, vanilla, salt, and ¾ cup of sugar over medium heat. Stir with love for 3-5 minutes until everything’s perfectly dissolved and the sweet aroma fills your kitchen.
  2. Chill out! ❄️ Give the mix a little cool down and then, with a whisper of tenderness, lay a piece of plastic wrap directly on it – no skin allowed here! Tuck it into the fridge for a dreamy, chilled 2-hour nap.

Bake the Cake Bites:

  1. Low and slow! 🌬 Preheat your oven to 275 degrees. Get your angel food cake cubes all snug on a parchment-paper-lined baking sheet and toast them for 30 minutes. They’ll emerge crisp and golden, ready for their ice cream debut.

Stir Up the Strawberry Swirl:

  1. Berry blast! 💥 In another pan, mix strawberries and the remaining sugar. Boil them into a berry beautiful jam, breaking up the strawberries and letting the flavors meld. Once it’s bubbling and thick, pop it in the fridge alongside our milky mix.

Churn Baby, Churn:

  1. Here’s where the magic happens! 🪄 Pour your milk concoction into the ice cream maker. Watch in awe as it turns into something that looks and tastes like a puffy cloud from a whimsical wonderland.

Layer and Swirl:

  1. It’s time to assemble! 🎨 Layer your creamy masterpiece with strawberry jam and cake cubes in a container. We’re creating art in every layer, but don’t overmix; you want to see those gorgeous swirls!
  2. The hardest part – wait! Freeze your masterpiece for 4-6 hours. Grab a spoon (or don’t – we don’t judge!) and indulge in your freshly churned strawberry shortcake ice cream.

Ingredients

  • 2 cups whole milk
  • 2 cups heavy whipping cream
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon salt
  • 1 1/4 cups sugar divided
  • 3 cups cubed angel food cake
  • 1 pound fresh strawberries coarsely chopped

Instructions

  • In a medium saucepan over medium heat, add the milk, whipping cream, vanilla, salt, and ¾ cup of sugar. Stir constantly for 3 to 5 minutes as the mixture heats and the sugar dissolves.
  • Cool slightly and then transfer to a bowl. Place plastic wrap over the top, making contact with the milk mixture to make a skin, and refrigerate for at least 2 hours.
  • Preheat the oven to 275 degrees.
  • Prepare a baking sheet with parchment paper. Place the cubes of angel food cake on the baking sheet in an even layer.
  • Toast in the oven for 30 minutes. Remove and allow to cool completely at room temperature.
  • Meanwhile, in another saucepan, place the strawberries and remaining sugar.
  • Bring the mixture to a boil over medium heat, smashing the strawberries as it cooks. Continue cooking, stirring often, for about 10 minutes or until the mixture has thickened.
  • Cover and refrigerate for at least 2 hours.
  • When ready to make the ice cream, pour the milk mixture into the ice cream maker and freeze according to the manufacturer's instructions.
  • When the ice cream is set, spoon about ⅓ of the ice cream into a freezer container.
  • Add ⅓ of the strawberry sauce and ⅓ of the angel food cake. Repeat the layer until all of the ingredients are in the freezer container. Carefully swirl the mixture but do not over-stir.
  • Freeze for at least 4 to 6 hours.
