How to Make the Best Veggie Sandwich

  • 8 Slices whole grain bread
  • Red pepper hummus (Any flavor of hummus can be used)
  • Vegan mayo
  • 1 Cucumber- sliced
  • 1 Tomato- sliced
  • Sprouts
  • Red leaf or green lettuce – Washed and patted dry
  • Pickled red onion and jalapeno (raw red onions can be used in place of pickled red onions and jalapenos)
  • 1 Tablespoon everything bagel seasoning or 1 tsp of each salt and pepper

This recipe make 4 sandwiches.

  1. Slice the cucumber and tomato on a clean cutting board, then set them aside.
  2. Rinse the lettuce and gently pat it dry with a towel; set aside.
  3. Lay 8 slices of bread on the cutting board. Spread hummus on 4 slices and vegan mayo on the other 4 slices.

  1. Layer sprouts over the slices with mayo. On the slices with hummus, add pickled red onions and jalapeños.

  1. Put together the sandwich by adding lettuce, cucumber slices, and tomato slices on top of the hummus. Sprinkle the tomato slices with Everything Bagel seasoning, or use salt and pepper.

  1. Complete the sandwich by placing the bread slices with mayo and sprouts on top of the ones with the vegetables. Press gently, slice the sandwich in half, and serve.
