– 1 ¾ cup cooked black beans, drained – 2 large jalapeno – 3 cloves garlic – ½ medium red onion, diced – 2 medium tomatoes, washed and diced – ½ cup loosely packed cilantro leaves, washed, dried, and chopped – Juice of 1 lime – 2 tbsp neutral oil – ¾ tsp ground cumin – ¾ tsp smoked paprika – ½ tsp dried oregano – ¾ tsp sea salt

Cut the tops off the jalapeños and slice them in half. Remove some or all of the seeds and ribs if you want less heat.

Slightly crush the garlic cloves and peel them.  Finely dice the red onion and chop the tomato.

Wash and chop the cilantro, then set it aside. Heat the oil in a heavy skillet over medium-high heat.

Place the jalapeño halves and garlic cloves in the skillet. Sear for 1-2 minutes per side until they are browned and softened. Remove them from the skillet and chop finely.
