- ½ cup warm water 70 to 80 degrees
- 1 egg room temperature
- 3 tablespoons butter softened
- 1 large sweet potato cooked, peeled and mashed (about ¾ cup)
- 4 cups all purpose flour
- 3 tablespoons sugar
- 1 ½ teaspoons salt
- 2 ¼ ounce packages or 4 ½ teaspoons active dry yeast
Peel, boil and mash your sweet potato.
Place ingredients into the bread machine in the order listed or according to your manufacturer’s instructions.
Program the bread machine using the dough setting.
After the initial mix, check and add flour or water if needed.
When the dough cycle has completed, punch down the dough and transfer to a lightly floured surface.
Divide the dough into 24 equal pieces and shape into a ball.
Place the rolls on a large baking sheet lined with parchment paper.
Cover, place in a warm, draft-free location, and allow to rise until doubled in size, about 1 hour.
Meanwhile, preheat the oven to 400 degrees.
Bake the rolls for 8 to 10 minutes or until lightly browned.
