Chicken Teriyaki Stir Fry Recipe

This teriyaki stir fry marinated chicken that is paired with stir fry vegetables and baked in the oven and served over fluffy rice.

Ingredients
  

  • 1 pound boneless skinless chicken breast tenderloins
  • 2 cups teriyaki marinade
  • 1 package frozen stir fry vegetables
  • Rice for serving optional

Instructions
 

  • Combine the chicken tenderloins with one cup of the teriyaki marinade in a zip-top bag. Seal the bag and allow the chicken to marinate for at least four hours.
  • When ready to cook, preheat the oven to 375 degrees and spray a baking sheet with nonstick cooking spray.
  • Stir together the frozen vegetables and remaining marinade.
  • Place the chicken on one side of the sheet pan, then spread the vegetables evenly across the rest of the pan. Drizzle the remaining marinade in the bowl over the top of the chicken and vegetables.
  • Bake for 30 minutes, until the vegetables are softened and the chicken is cooked through.
  • Serve over rice, if desired.

Notes

Tips and Variations

  • Cut your chicken into even bite-size pieces so it makes serving up easy and will cut down the bake time in the oven.
  • Any vegetables work for this recipe. So reach for your favorite veggies and just toss them all together.
  • If you like a bit of broil to vegetables at the end of cooking turn the oven over to broil to create that golden crust on top of the veggies and the chicken.
  • Feel free to swap the chicken with sliced steak or even pork if you prefer that option.
  • About the last 5-8 minutes toss on some marinated shrimp for a double meat dinner idea.
  • You can change up the marinade to any type of flavor you would like. I just prefer the teriyaki flavor.

Storing

Refrigerate: Refrigerate any of the leftovers you have. This chicken stir fry will store for 3-4 days in the fridge in a sealed container. It makes a great meal prep option for easy grab-and-go meals.
Freeze: You can also freeze any of the stir fry you do not eat. Place in a freezer container and freeze for 2-3 months. Then when ready to eat heat from frozen or thaw in the fridge overnight and reheat as you would like.
Freezer Meal: Add the chicken, marinade, and vegetables into a freezer bag or container. Mix well and freeze for 1-2 months. Then when you want to serve this up, thaw it in the fridge overnight. Then spread on a sheet pan and bake as you would originally. This is a great freezer meal to stock your freezer.
