Cranberry Orange Cookie Recipe

Ingredients
  

  • 1/2 cup dried cranberries
  • 1/2 cup sugar
  • 2 cups all-purpose flour – spooned and leveled not scooped
  • 1/4 tsp salt
  • 1 cup butter cubed (and cold)
  • Zest of a whole orange
  • 2 tbsp of freshly squeezed orange juice

Instructions
 

  • Preheat oven to 325 F. Line two cookie sheets with parchment paper. 
  • Pulse the cranberries a few times in a food processor.
  • Add the flour, sugar, salt and give it 2 or 3 pulses. Add the butter and pulse till it resembles a crumbly mixture.
  • Add the orange zest and juice. Pulse to mix.
  • Transfer to a floured surface, knead, and roll into a log.
  • Cling wrap and chill for 1 hour. Cut into 1/4-inch discs.
  • Arrange on a cookie sheet and bake for 14-16 minutes till golden brown around the edges.
  • Cool on the wire rack.
  • Store in an airtight container.
