Eggnog Pancakes Recipe

Eggnog cake is a delicious and festive dessert that is perfect for any holiday celebration made in a bundt pan. It is also an easy cake to make.

Ingredients
  

  • 2 cups flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 1 teaspoon of cinnamon
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 tablespoons butter melted
  • 2 1/2 cups eggnog
  • 1 cup of water optional

Instructions
 

  • Warm your skillet at medium-low heat.
  • In a medium bowl, mix the eggs, vanilla, and butter.
  • Add your dry ingredients: flour, baking powder, salt, cinnamon and nutmeg. Mix
  • Slowly incorporate the egg nog. If the batter is still thick, add the water slowly until the desired thickness is achieved. The batter should be thinner than the cake batter but not too liquid.
  • Spray your skillet with cooking spray. Using 1/4 cup, pour your pancake batter into the skillet. Let sit for about one to two minutes, or until small bubbles start to form. Then flip and continue to cook the other side for an additional minute.
  • Repeat step 5 until all the batter is gone.
  • Serve with maple syrup, a homemade glaze, or as is!
