- 6 bell peppers your choice of color
- 1 box Cilantro Lime rice cooked to package instructions
- 2 shredded chicken breasts from the above recipe
- 3 cups shredded pepper jack cheese divided
- 1 can of black beans rinsed and drained
Preheat oven to 350 degrees.
Cut off the tops of your rinsed peppers and remove the seeds and white parts from the inside.
Then with a small paring knife, carve your jack-o-lantern faces.
In a large bowl, mix cooked rice, shredded chicken, beans, and 2 cups of cheese.
Stuff the peppers with the rice and chicken mixture and top with the remaining cheese and place into a baking dish.
Bake until cheese is melted and peppers are at a desired tenderness, about 30 minutes.
Tips and Tricks
Peppers can be boiled for 5 minutes after carving for more tenderness.
Rice can be cooked in a rice cooker to save time.
To make ahead, wrap peppers in plastic wrap after stuffing and refrigerate, when ready to cook, preheat oven to 350, remove plastic wrap and bake for 1 hour.
