Ingredients

Red Layer:

  • 10 oz strawberries fresh or frozen
  • 1/2 cup water
  • 1-2 tbsp sugar depending on the sweetness of the strawberries

White Layer:

  • 12 oz coconut milk
  • 1/2 cup sugar
  • 1/4 cup lemon juice

Blue Layer:

  • 1 1/2 cup warm water
  • 3 tbsp sugar more if you want it sweeter
  • 3 tbsp raspberry extract
  • 3-4 drops of blue food coloring depending on how deep you want the color to be.

Instructions

  • Red Layer
  • In a blender, puree the red-layer ingredients. Fill the popsicle mold 1/3 of the way with the mixture. Freeze for at least 3 hours.
  • White Layer
  • Mix white-layer ingredients. (An empty water bottle and a funnel work great for this!) Fill the next 1/3 of the mold with the white layer mixture. Freeze for at least 3 hours.
  • Blue Layer
  • Mix together the blue-layer ingredients until the sugar is dissolved. Fill the remaining 1/3 of the mold with the blue mixture. Freeze for at least 6 hours.
  • Carefully remove the popsicles from the mold and enjoy!
