Slow Cooker Cajun Chicken Alfredo Pasta Recipe

Ingredients
  

  • 2 pound chicken breasts
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 2 tablespoon olive oil
  • 1 pound smoked sausage sliced into 1-2 inch pieces
  • 3 cups of heavy cream
  • 4 cups of low sodium chicken broth
  • 4 tablespoons butter
  • 2 tablespoons Tony’s Creole cajun seasoning
  • 2 cloves garlic smashed and minced
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1 pound of uncooked penne pasta
  • 1 cup hot water
  • 8 oz freshly shredded parmesan cheese

Instructions
 

  • Season the chicken breasts with salt, pepper, and garlic powder.
  • Heat olive oil over high heat and sear the chicken breasts on both sides for 1-2 minutes per side.
  • Place the seared chicken breasts in the slow cooker along with the sausage, heavy cream, chicken broth, butter, garlic cloves, 1 teaspoon of kosher salt, pepper, and Cajun seasoning.
  • Cook on high for 2.5 hours or low for about 4 hours until the chicken reaches an internal temperature of 165 degrees Fahrenheit.
  • Once the chicken is cooked, please remove it from the slow cooker and set it aside to cool.
  • Stir in 1 cup of hot water and the uncooked penne pasta into the slow cooker. Cover and cook on high for about 30 minutes or until the pasta is tender.
  • While the pasta cooks, cut the cooled chicken into chunks.
  • Once the pasta is tender, stir in the freshly grated Parmesan cheese and the chicken chunks.
  • Let the mixture sit covered for 10-15 minutes to become thick and creamy.
