Start by boiling your noodles al dente according to the directions on the box. Drain and rinse noodles under cold water to stop the cooking process.
Mix together Ricotta cheese, 1 cup of alfredo sauce, 8 oz. of shredded mozzarella cheese, a can of chicken breast, 4 ounces of Parmesan cheese, Italian seasoning, and eggs.
Pour half of the leftover alfredo sauce into a 9×13 pan and spread around. I used a 9×9 pan because I was making some Alfredo and some red sauce shells.
Spoon mixture into each shell and place seam down in the pan.
When done, cover with the remaining alfredo sauce and spread over shells so they are all covered.
Sprinkle the remaining 8 ounces of shredded mozzarella. Add a little Italian seasoning on the top.
Place in a preheated 350-degree F oven and bake for 30 – 35 minutes or until cheese is melted and brown and bubbly.

You could probably cut out some points by making Homemade Alfredo Sauce with skim milk, using fat-free shredded mozzarella, and part-skim Ricotta cheese or cottage cheese.I make the recipes so my family will eat them and really don't want to make a separate one for myself. With Weight Watchers, you can eat anything!
