I had leftover cheese mixture from my Lasagna Fritta Olive Garden Copycat recipe.
So I decided to add some chicken breast and made these amazing and cheesy Chicken Alfredo Stuffed Shells.
And let me tell you, it was the best decision ever. My husband has been requesting these weekly.
Luckily, they’re pretty simple to make, so you’ll be able to spend more time socializing and less time in the kitchen.
I also made them for when my husband’s aunts came over to see his mom. Let’s just say…they went quickly.
Since I started back on my Weight Watchers program, I figured I’d better calculate the WW points so I can eat them too.

How to Make Chicken Alfredo Stuffed Shells
Start by boiling your noodles al dente according to the directions on the box.
Drain and rinse noodles under cold water to stop the cooking process.
Mix together Ricotta cheese, 1 cup of alfredo sauce, 8 oz. of shredded mozzarella cheese, a can of chicken breast, 4 ounces of Parmesan cheese, Italian seasoning, and eggs.
Pour half of the leftover alfredo sauce into a 9×13 pan and spread around. I used a 9×9 pan because I was making some Alfredo and some red sauce shells.
Spoon mixture into each shell and place seam down in the pan.
When done, cover with the remaining alfredo sauce and spread over shells so they are all covered.
Sprinkle the remaining 8 ounces of shredded mozzarella.
Add a little Italian seasoning on the top.
Place in a preheated 350-degree F oven and bake for 30 – 35 minutes or until cheese is melted and brown and bubbly.
Serve with one of our 55 Chicken Alfredo Side Dishes.
