Potato Smorgasbord
I remember when I was a teenager, (yes, that was a really long time ago!) there was a restaurant at the mall that served nothing but fancy-filled baked potatoes.
I loved that place. However, for some reason, it didn’t last long.
Whatever you wanted to be stuffed inside a potato, they pretty much had.
Now, I like to visit McAlisters Deli whenever we are in Kansas or in Florida. We don’t have one here in NY, so I make my own.
6 Minute Baked Potato Ingredients
- 1 Baking Potato per person
How to Make a Baked Potato in Microwave
Start by scrubbing the skin of your potato under running water.
Wrap your potato in a paper towel.
Run your potatoes under water to soak the paper towel.
Place your baked potato on a microwave-safe plate and place your baked potato in microwave.
Set for 4 minutes on high.
Flip and set for another 2 minutes on high.
Your potato will be hot so grab it with a towel or oven mitt. It should feel soft when you squeeze it.
If it still feels hard, place it back in for another minute.
Unwrap from the paper towel and slice down the center.
Add your toppings, butter, sour cream, meatballs, etc.
Enjoy!
Baked Potato Tips
- For 3 or 4 potatoes, start with 6 minutes, flip, and set for 4 minutes. If they are still hard, repeat for another 4 minutes on high.
- You can substitute sweet potatoes if you would like.
- Some people like to jab the potato with a fork. I think that lets out the steam so I don’t.
- You can add salt to the outside of your potato before cooking if you want. I do not. I let the individuals salt and pepper their own potatoes to their liking.
