Chipotle Chicken Tacos with Cabbage Slaw & Lime Crema

We are so excited because we just got a new local COSTCO here in Florida. It is my favorite membership store around with Sam’s Club coming in a close second. Plus we got a good deal on a new membership. 😉

COSTCO is one of those stores that you can’t just run into for one or two things. You will most definitely come out with a shopping cart full.

Take today for example. I ran in for styrofoam plates and coffee. Instead came out with 7 things with two of them being the COSTCO Street Tacos Kit and a rotisserie chicken.

A taco is sitting on top of a plate.

I like to make my rotisserie chicken in the air fryer sometimes. However, you can’t even buy a chicken for the price of the COSTCO rotisserie chicken.

So I always take advantage of this COSTCO item when I’m there.

And most recently, I saw someone on TikTok – make the COSTCO street tacos.

And everyone knows what today is…it’s taco night better known as Taco Tuesday.

I like a soft taco whereas my husband likes a hard shell taco.

The COSTCO Taco Kit is a convenient and delicious option for making street tacos at home.

But you can always make your own easy Cheesy Baked Tacos too.

Understanding the Lack of Instructions

Unlike many store-bought kits, the COSTCO Street Taco Kit may not come with detailed heating instructions.

At first glance, this may seem perplexing, but there’s a good reason for it.

I did find it in small print above the ingredient list that says to heat chicken to 165 degrees Fahrenheit and top with condiments.

Essential Tools for the Perfect Tacos

While the chicken street-tacos kit provides most of the necessary ingredients, there are a few essential tools you’ll need to ensure taco excellence:

  • Skillet or griddle for cooking the chicken thighs
  • Dry skillet for toasting the tortillas
  • Mixing bowl for the cabbage cole slaw

Having these tools on hand will streamline your cooking process and help you achieve the best possible results.

Medium Heat for Juicy Chicken

Cook the chicken in a frying pan with about a tablespoon of oil for about 6-8 minutes on each side, or until they reach an internal temperature of 165°F (74°C).

Toasting the Tortillas

When it comes to toasted tortillas, using a dry skillet is the key to achieving authentic results.

Avoid using oil or butter as it can interfere with the toasting process and make the tortillas greasy.

A dry skillet allows the tortillas to toast evenly and develop that desired texture.

It is recommended to toast each side for about 30-60 seconds.

Mixing the Cabbage Slaw: A Fresh Twist

The cabbage slaw is a fresh and vibrant addition to your street tacos. It adds a delightful crunch and complements the flavors of the other ingredients.

To mix the cabbage slaw, follow these steps:

  1. Place the cabbage slaw in a medium bowl.
  2. Pour the Crema dressing over the shredded cabbage.
  3. Gently toss everything together until the cabbage is evenly coated with the dressing.

The crema adds creaminess and a burst of tangy flavors to the slaw.

The cabbage slaw is now ready to be added to your street tacos and will provide a refreshing contrast to the other flavors.

I didn’t think my husband would like the cabbage slaw on his tacos. However, he asked for all his taco to be made with it on them.

You can also mix in the salsa if you would like (and everyone else likes.) However, my husband would use a whole jar of salsa and I only like a little bit. So we add that on the top at the end.

The Role of Lime Juice and Lime Slices in Enhancing Flavor

Lime juice is a key ingredient that enhances the overall flavor of your street tacos.

The bright and tangy taste of lime juice adds a refreshing element to the dish, cutting through the richness of the other ingredients.

After mixing the cabbage slaw with the cilantro-lime crema, drizzle some freshly squeezed lime juice over the slaw mixture for an extra burst of citrus flavor.

In addition to lime juice, serving your street tacos with lime slices on the side allows your guests to customize the level of tanginess according to their preference.

Squeezing fresh lime juice over the assembled tacos before digging in adds that final touch of brightness.

The Order of Ingredients for the Ideal Bite

  1. Start with a warm tortilla as the base. This will provide a sturdy foundation for the rest of the ingredients.
  2. Add a layer of the cooked chicken. The tender and flavorful chicken will be the star of your tacos.
  3. Next, top the chicken with a generous portion of the cabbage slaw. The crispness and tanginess of the slaw will add a refreshing element to the tacos.
  4. Sprinkle some Mexican cheese on top (I did need to add extra cheese). The creamy and slightly salty cheese will lend a rich and indulgent flavor to the tacos.
  5. Finally, drizzle some salsa and cilantro-lime crema over the ingredients. (or skip if you mixed the cabbage slaw the sauce.) The tangy salsa and the creamy crema will provide a burst of flavor and tie all the components together.

Alternative Cooking Methods: Microwave and Air Fryer Options

COSTCO Street Taco Kit Microwave Method

If you prefer a faster cooking method for your southwestern street tacos, using a microwave is a convenient option.

However, it is important to understand that chicken might come out a bit chewy.

Here are instructions for adjusting cooking times based on different microwave wattages:

  1. For microwaves with a wattage of 700-900, heat the chicken for approximately 1-2 minutes, or until heated through.
  2. If your microwave has a wattage of 900-1100, reduce the cooking time to 30-60 seconds.
  3. For microwaves with a wattage of 1100 or higher, decrease the heating time to 20-45 seconds.

Always check that the chicken has reached a temperature of 165 degrees.

Air Fryer Instructions for Crispier Edges

If you desire a crispy texture to your street tacos, using an air fryer is a fantastic alternative cooking method.

Follow these simple instructions to achieve crispier edges:

  1. Preheat your air fryer to 400°F (200°C).
  2. Place the chicken, tortillas, and cheese in the air fryer basket.
  3. Cook for approximately 5-6 minutes, or until the chicken is heated through and the tortillas and cheese are slightly crispy.
  4. Check frequently and adjust the cooking time according to your preference for crispiness.

Make Your Own Starting with the Right Ingredients

By selecting high-quality ingredients, you will ensure that your street tacos are bursting with flavor. Here are some tips to help you shop for the best taco ingredients:

  1. Protein: Look for fresh, tender chicken thighs with the skin removed or opt for marinated pre-cooked chicken for convenience.
  2. Tortillas: Choose soft corn tortillas for an authentic street taco experience. Look for tortillas that are pliable and free of cracks.
  3. Cabbage: Select a firm, compact head of cabbage. It should have vibrant green leaves with no signs of wilting.
  4. Cilantro: Choose fresh cilantro with bright green leaves and a strong aroma.
  5. Lime: Pick firm and juicy limes that are heavy for their size. They should have a thin, smooth skin.
  6. Cheese: Consider using crumbled cotija or grated queso fresco for your tacos. These Mexican cheeses add a creamy, tangy flavor.
