How to Make Banana Nut Muffins

Banana nut muffin is a favorite of ours around here. It’s the perfect quick and easy go-to breakfast meal that you can make ahead of time.
It’s easy and simple, and will make you wonder why you’ve never tried making them before at home.
Here’s a recipe that will become a regular on your breakfast menu.
Equipment
- 12 Ct cupcake tin
- Cupcake liners
- Ice cream scooper
- Hand or stand mixer
- Rubber spatula
Ingredients
- 1/2 cup (1 stick) unsalted butter, softened
- 3/4 cup granulated sugar
- 1/4 cup packed brown sugar
- 2-3 large bananas
- 2 large eggs
- 3 tbsp whole milk
- 1 tsp vanilla
- 2 cups, all purpose flour, scooped and leveled
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1 tsp all spice
- 1/2 chopped walnuts
Instructions:
- Preheat the oven to 350°F (175°C).
- Line a muffin tin with paper liners.
- In a large bowl, cream together the butter and sugar until the mixture is light and fluffy.
- Add the bananas and mix them to the butter and sugar mixture, mixing well.
- Add the eggs, milk, and vanilla extract.
- It will be lumpy from the bananas, which is fine.
- Add flour, baking soda, baking powder, cinnamon, and allspice to the batter. Mix until flour is combined.
- Coat walnuts in a little flour and stir into batter.
- Spoon the batter into the prepared muffin liners.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean. Then Remove the muffins from the oven and let them cool on a wire rack.
