How to Make Banana Nut Muffins

Banana nut muffin is a favorite of ours around here. It’s the perfect quick and easy go-to breakfast meal that you can make ahead of time.

It’s easy and simple, and will make you wonder why you’ve never tried making them before at home.

Here’s a recipe that will become a regular on your breakfast menu.

Equipment

  • 12 Ct cupcake tin
  • Cupcake liners
  • Ice cream scooper
  • Hand or stand mixer
  • Rubber spatula

Ingredients

  • 1/2 cup (1 stick) unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 2-3 large bananas
  • 2 large eggs
  • 3 tbsp whole milk
  • 1 tsp vanilla
  • 2 cups, all purpose flour, scooped and leveled
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1 tsp all spice
  • 1/2 chopped walnuts

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Line a muffin tin with paper liners.
  3. In a large bowl, cream together the butter and sugar until the mixture is light and fluffy.

  1. Add the bananas and mix them to the butter and sugar mixture, mixing well.

  1. Add the eggs, milk, and vanilla extract.
  2. It will be lumpy from the bananas, which is fine.
  3. Add flour, baking soda, baking powder, cinnamon, and allspice to the batter. Mix until flour is combined.

  1. Coat walnuts in a little flour and stir into batter.

  1. Spoon the batter into the prepared muffin liners.

  1. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean. Then Remove the muffins from the oven and let them cool on a wire rack.
