Ranch Chicken and Broccoli Casserole Ingredients
- Russet potatoes, peeled and diced
- Frozen broccoli florets, thawed
- Butter
- Ranch seasoning mix
- Shredded cheddar cheese
- Bacon, finely chopped (or ¼ cup real bacon bits)
- Cooked shredded chicken

How to make Potato Broccoli Bake
Preheat the oven to 375 degrees and grease a baking dish with nonstick cooking spray.
Boil potatoes in a pot of water until just tender, between six and eight minutes, and drain.
Transfer the cooked potatoes to the casserole dish and top with butter.
Coat the potatoes in the butter and seasoning and then add the ranch seasoning.
Sprinkle half the cheese over the potatoes and top with the chopped bacon.
Spread the shredded chicken in an even layer over the top of the bacon, then add the broccoli.
Top the casserole with the remaining cheese.
Bake until the broccoli is heated for about 20 minutes and the cheese is melted.

Ingredients
- 4 medium russet potatoes, peeled and diced
- 1 package frozen broccoli florets, thawed
- 2 tablespoons butter
- 2 tablespoons ranch seasoning mix
- 2 cups shredded cheddar cheese
- 4 strips bacon, finely chopped (or ¼ cup real bacon bits)
- 2 cups cooked shredded chicken
Instructions
- Preheat the oven to 375 degrees and grease a baking dish with nonstick cooking spray. Bring a pot of water to a boil and add the potatoes. Boil until just tender, between six and eight minutes. Transfer the cooked potatoes to the casserole dish and top with butter.
- When the butter is melted, add the ranch seasoning and toss to coat the potatoes in the butter and seasoning. Sprinkle half the cheese over the potatoes.
- Spread the shredded chicken in an even layer over the top.
- Top with the chopped bacon.
- Then add the broccoli.
- Top the casserole with the remaining cheese.
- Bake in the preheated oven for 20 minutes, until the broccoli is heated and the cheese is melted.
