What are Texas Twinkies
No, it’s not the kind of twinkies that you are thinking of. These are waaaaay better!
A Texas Twinkie is not your average jalapeno popper!
Instead, these delicious treats contain cream cheese and smoked brisket inside a crunchy exterior covered in thick-cut bacon.
The sweet and tangy flavor of a Texas Twinkie is sure to please any palate.

The delicious, greasy goodness that is a Texas Twinkie has been appropriately nicknamed “the happy meat.”

Bacon Wrapped Jalapeno Poppers Oven Ingredients
- Jalapeños sliced and de-seeded – Just like in Texas, go big or go home.
- Thick-cut bacon – Thick cut bacon is easier to wrap around the peppers and holds it together better.
- Cream cheese room temp – Leave at room temp for about an hour before ready to make these.
- Smoked brisket chopped or shredded – We will have a post on how to smoke a brisket coming up shortly for those that don’t know how to.
How to Make Brisket Stuffed Peppers
Start by preparing your jalapeños. When selecting your jalapeños at the store, just like they say in Texas “bigger is better”!
I trim the top of the jalapeño off. Next, using a sharp pairing knife, slice a straight line down the backside of the jalapeno (it’s often the flat part). Using your fingers spread the jalapeno open.
Grab your pairing knife and carefully de-seed the jalapeño. This is where all the heat is. If you want to leave the jalapeno a little spicy, leave the white rib portion and remove the seeds.
Rinse your jalapeños under water to clean them and rinse any seeds away.
Using a knife stuff half of the inside of the jalapeño with cream cheese. Ensure there is enough as this will help the brisket stick to and keep intact.
Once the jalapenos have been stuffed with cream cheese it’s time to add the brisket. Take your shredded or chopped brisket and stuff each jalapeno.
On a flat surface, lay out a slice of thick-cut bacon.
Beginning at one side, secure the bacon to the jalapeno with a toothpick. Wrap the jalapeno with the bacon and secure the other end with another toothpick.
When all of the jalapenos have been wrapped in bacon it’s now time to cook them. You can choose to cook them in the oven, air fryer, or the smoker.
BACON WRAPPED JALAPENO POPPERS OVEN COOKING:
Preheat your oven to 400°. Place the Texas Twinkies on a baking sheet (preferably on a wire rack with a baking sheet under to catch the drippings), this will allow the bacon to crisp up nicely. Bake for 20-30 minutes until the bacon has cooked through and is done to your liking.
SMOKER COOKING:
Preheat your smoker to 275°. Place the Texas Twinkies directly on the wire rack. Allow cooking for 60-90 minutes, until the bacon has cooked through.
AIR FRYER COOKING:
It’s no secret that I love my Air Fryer and I use it daily. While making a bunch of these in the air fryer will take some time, making just a few for an after-school snack is no problem at all.
Set your air fryer to 350 degrees F and cook for about 15-20 minutes. Place a couple of ends of bread at the bottom of the air fryer under the basket to absorb the bacon grease. It cuts down on smoke.
Be sure to keep a close eye on them, unless of course, you like the bacon burnt like my husband.
How to Reheat Jalapeno Poppers
You can place in the oven at 350 degrees F for about 10 minutes or in the air fryer at 350 for about 5 minutes.
They are not good reheated in the microwave. Just saying.
What to Serve with Atomic Buffalo Turds Recipe
First off, I’m not sure where that name came from, but it seems they are also known as that.
I like to serve these as appetizers on game day or at 4th of July parties. Since they are filled with brisket, there really is no need to serve anything else with them.
However, make it a meal by serving them with a few of the following recipes.
